Asian Mince in Lettuce Cups


1 Tsp sesame oil

2 Tbsp peanut butter

1 lb very lean hamburger

1 clove garlic-chopped

1 lime juiced

1 Tsp fresh ginger-grated

4 medium tomatoes-diced

Salt and pepper to taste

1 Tsp Tabasco sauce-optional

2 cups bean shoots(sprouts)

3/4 cup fresh coriander leaves-chopped

1 large lettuce
halved or quartered and outer leaves removed

8 oz. can sliced bamboo shoots-drained


Heat oil in large wok, add garlic and ginger-stir fry for 1 minute.

Add the meat and cook over high heat for 5 minutes or until browned.
Add the bamboo shoots, tomatoes, lime juice and Tabasco sauce, combine well and cook for 5 minutes until heated through.

Add bean shoots, coriander and seasoning.

Continue to stir fry a further 5 minutes or until excess fluid has been cooked off.

Put the meat mixture into the lettuce cups.

Serve with rice.

Can be make ahead of time,reheated and placed in lettuce cups just before serving.

Variations:Substitute chopped chicken,steak or pork for the hamburger

For vegetarian, substitute chopped tofu or just go with the veggies.
* Note: Though technically not the same,99% of recipes calling for fresh coriander leaves are referring to cilantro.
