Cheese Straws


1 1/2 cups flour

1 cup grated cheese of choice

6 Tbsp shortening

4 Tbsp ice water

1/2 Tsp salt (optional)


Sift the flour,remeasure and then sift again with the salt if using.

Cut in the shrtening until mixture resembles small grain.

Slowly and gently work in the water until little balls of dough just cling together.

Turn out onto a lightly floured board and roll to 1/8 inch thick.

Sprinkle on 1/2 of the cheese.

Fold over and reroll, repeating this procedure 3 times.

Prick the dough all over with tines of a fork.

Cut dough into strips 1/2 inch wide and 5 inches long.

Bake at 450 deg until brown and crisp.
