Cottage Cheese


Ingredients


For Sweet Milk Cottage Cheese

2 Qt milk

2 Rennet tablets

2 Tbsp cold water

Small amt of cream

salt and pepper to taste

Small amt of paprika if desired


For Sour Milk Cottage Cheese

2 Qt sour milk

salt and pepper to taste

small amt of cream


Directions

For sweet milk cottage cheese.

Heat milk to lukewarm.

Dissolve the rennet tablets in the cold water then add it to the milk.

Cover with a cloth and let it stand in a warm place until set.

Pour mixture into a thin cloth bag and drain liquid.

Remove the curd from the bag and break into small pieces.

Moisten with desired amt of cream and season with salt and pepper to taste.
Store in fridge and use with 2-3 days.


For sour milk cottage cheese

Heat milk in top of double boiler(warm but not boiling water) until soft curds form.

Pour mixture into a thin cloth bag and drain the liquid.

Remove the curd from the bag and break into small pieces.

Moisten with desired amt of cream and season with salt and pepper to taste.
Store in fridge and use with 2-3 days.
