Honey Beer Mustard


1/2 cup brown mustard seeds*

1/4 cup yellow mustard seeds

2/3 cup malt vinegar

2/3 cups beer - your choice

4 Tsp honey

1 1/2 Tsp salt


In a medium plastic or glass bowl, combine the mustard seeds, malt vinegar and beer.

Cover and soak for a minimun of 48 hours.

The seeds should remain covered with liquid.

Some mustard seeds bulk up and take in more liquid than others, due to age and other factors.

If the liquid goes to low, add equal portions of beer and vinegar, but just a few spoonfuls at a time.

Pour seed solution into a food processor and process,on high,until a creamy paste forms (about 4 to 5 minutes).

Add honey and salt and process until thoroughly combined.

Keep refrigerated and use within 3 months.

*Mustard seeds are available at most health food stores.

Brown mustard seeds are also called black mustard seeds.
