Savory Summer Sausage Rolls
Ingredients
6 lb pork
4 lb beef
1/2 cup tender quick salt
4 tbsp liquid smoke
3 tbsp sugar
1 tbsp pepper
1 tsp ground ginger
1 tsp garlic powder
Directions
Chop the pork and beef into small cubes.
Combine the meat with the remaining ingredients.
Grind mixture through a meat grinder using the smallest blade.
Cover and refrigerate overnight for flavors to blend.
Regrind again using the small blade.
Shape mixture into 8-10 inch rolls.
Wrap each roll in foil and again refrigerate overnight.
Unwrap and bake at 200 for 4 hours or til meat is done.
Rewrap and store in freezer til ready to use.
Thaw in refrigerator,slice and serve with crackers.
