Make Your Own Corned Beef #1


Note: This recipe is for those who are adventurous enough to try and make their owned corned beef.

Ingredients


1 8-10 lb beef brisket-fat trimmed off

2 cup rock or curing salt

2 cup dark brown sugar

1 1/2 tsp sodium bicarbonate(baking soda)

4 tsp salt peter(potassium nitrate)-available at drugstores

Several crushed peppercorns or whole allspice

Several blades of fresh or 2 tsp ground mace

Several cloves of peeled garlic(depending on your taste)

1-2 gallons of water

1 extra large non-metallic container with lid


Directions

To make a brine,for each gallon of water used,combine the rock salt,brown sugar,sodium bicarbonate,salt peter,peppercorns,mace and garlic in 1 quart of warm water and then add to the rest of the water.

Make several large jabs in meat with a fork,place the brisket in the container and pour in brine making sure it covers the meat by at least 2-3 inches.

Place lid on container and soak meat for 8-12 days adding more brine as needed.

After 12 days, remove meat from water,rinse,drain and cook as desired
