Make Your Own Summer Sausage
(Beef Log)

You know those cheese and sausage gifts that are popular during the Christmas season? Why not make your own sausage rolls to give as gifts or to enjoy yourself.


2 lbs very lean hamburger
(or your favorite cut of beef - finely ground)

1 cup water

1 1/2 Tsp liquid smoke

1/2 Tsp onion powder

1 Tbsp yellow mustard seed

1 Tbsp peppercorns
(or cracked pepper)

3 Tbsp Morton quick salt meat cure


Mix together all ingredients as if you are making a meastloaf.

Divide mixture in half and roll each half into a 2 inch log.

Wrap each roll in foil with the shiny side next to the meat.

Prick holes in the foil with a fork.

Refrigerate a minimum of 24 hrs (no less).

Place meat rolls side by side in a baking dish(leave in foil).

Bake at 325 deg for 1 hr and 15 min.

Cool,slice and serve with crackers and cheese bites.

Beef rolls may be frozen for up to 6 months after baking (if they last that long before you eat it all)
