Veal Parmesan with Marinara Sauce


For the Marinara Sauce

2 tbsp olive oil

2 cloves garlic-minced

1 onion-chopped

1 16 oz can tomatoes

1 6 oz can tomato paste

1 tbsp sugar

2 tsp basil

1 1/2 tsp salt

For the veal

1 cup dry bread crumbs

2 eggs

1 tsp salt

1/8 tsp pepper

6 veal cutlets-cut 1/4 inch thick

3 tbsp butter

8 oz mozarrela cheese-cut in 6 slices

1/4 cup grated parmesan cheese


For the sauce

Add the tomatoes,tomato paste,sugar,basil and salt.

Cook over low heat til thick and keep warm.

For the veal

Mix the bread crumbs,salt and pepper in a shallow pan.

Lightly beat the eggs in a separate shallow dish.

Dip each cutlet in egg then in crumbs and repeat.

Heat the butter til hot but not smoking.

Fry each cutlet til golden brown turning once(about 10 minutes).

When cutlets are done, spoon sauce cutlets and top each with a slice of mozarella.

Sprinkle the parmesan over all,cover and cook over low heat til cheese is melted.
