Bagels


Ingredients


2 tbsp sugar

1 package yeast

1 1/2 cup warm water

5 cup flour

1 egg white

1 tsp milk

Cooking spray


Directions

Disslove the sugar and the yeast in the warm water and let stand for 5 minutes.

Place mixture in a bowl and stir in 4 cups of the flour and the salt to form a soft dough.

Turn out onto a floured surface and knead for 10 minutes,adding more flour as needed.

Place in a greased bowl,turning to coat entire surface of dough.

Cover and let rise til almost double in size.

Punch down and then let dough rest for 5 minutes.

Shape dough into 16 equal sized balls and flatten each into a 3 1/2 inch disk.

Poke a hole in the center of each and gently swirl on your finger to enlarge the hole.

Place on a grased cookie sheet,cover and let rise til puffy(dough will not double in size at this time).This takes about 20 minutes.

Bring at least 2 quarts of water to boil in a large,deep pan and then reduce heat and keep water simmering.

Place one bagel at a time into the simmering water,turn it over immediately and remove it to drain.

Place the bagels on a greased cookie sheet.

Mix the egg white with the milk and brush evenly over the bagels.

Bake at 375 for 22 minutes.


Variations:
1.Sprinkle tops with poppy seeds or sesame seeds.
2.Mix 1/4 cup chopped onion into the dough before kneading.
3. Mix in 3/4 cup raisins,1 tsp cinnamon and an extra 1 tbsp of sugar to the dough before kneading.
4.Drain 3/4 cup blueberries and mix them with 1 tbsp flour and 1 tbsp sugar. Mix into dough after just after kneading so as not to mash the berries
