Basic Doughnuts


3 eggs

2 cups sugar

1 cup whipping cream

1 cup milk

1 tsp vanilla

6-7 cup flour

4 tsp cream of tartar

2 tsp baking soda

1 tsp salt

Oil for deep frying

Powdered sugar


In a large bowl,at medium speed,beat the eggs for 5 minutes.

Gradually beat in the sugar and continue beating for 30 seconds.

Add in the whipping cream,milk,vanilla,2 cups of flour,cream of tartar,baking soda,salt and nutmeg and beat til smooth.

Add enough of the remaining flour to form a soft dough.

Turn dough out onto a lightly floured surface and knead til smooth(about 8-10 minutes).

Place dough in a greased bowl,turning to coat.

Cover and chill for 2-3 hours.

Using only part of the dough at a time,roll out on a floured surface to a 1/2 inch thickness(keep rest of dough chilled til ready to use).

Cut with a doughnut cutter.

Heat oil to at least 375 and fry the doughnuts for 2 minutes on each side or til golden brown.

Drain on paper towels and sprinkle with powdered sugar.
