Nicole's Pumpkin Bread


1 15 oz can of pumpkin puree

4 eggs

1/2 cup vegetable oil

1/2 cup apple sauce

1 cup white sugar

1 cup of brown sugar

3 1/2 c of all purpose flour

2tsp baking soda

1 1/2 tsp salt

1 tsp cinnamon

1 tsp nutmeg

1/2 tsp ground cloves

1/4 tsp ground ginger

1/2-1 cup of raisins, cranberries or chocolate chips (optional)

1/2 cup chopped nuts (optional)


The recipe calls for 1 cup oil but to make it a little healthier,use the 1/2 cup oil and 1/2 cup applesauce--either plain or sweetened. You can also use sucanat in place of the white and brown sugar or 2/3 cup of agave.

Preheat oven to 350. grease and flour your pans. (you can use 2 big loaf pans, muffins, or a bundt pan)

In large bowl mix pumpkin, eggs, oil, apple sauce, water and sugars until blended.

In a separate bowl mix the flour baking soda, salt, cinnamon, nutmeg, cloves and ginger.

Combine the dry ingredients with the pumpkin mixturemixing just until blended.

Add in any of the optional ingredients you want to use and again mix until combined.

Pour into your pans.

Bake at 250 deg. For a loaf pan- approx 50 min. A bundt pan-approx 50-60 min and muffins are approx 20 min.

Store in a plastic bag to retain moistness.

Other options:

Frost with cream cheese frosting. Drizzle with a little confectionary sugar glaze. Dust with confectionary sugar. Strudel before baking(3 tbsp of butter cold, 1/4 flour, 1/4 cup of brown sugar and 2 tbsp of chopped nuts cut mixture until resembles little pebbles)
