Pecan Pie Mini Muffins
Ingredients
1 cup packed brown sugar
1/2 cup flour
1 cup chopped pecans
2/3 cup butter melted ( no substitues)
2 eggs beaten
Directions
Mix brown sugar,flour and pecans in a bowl and set aside. Combine melted butter and eggs and mix well.
Stir into flour mixture just til moistened. Fill greased and floured mini muffin tins 2/3 full.
Bake at 350 degrees for 20-25 minutes or until muffins test done. Remove immediately to wire rack to cool...
Makes 2 1/2 dozen
