Golden Potato Rolls


Ingredients


1 package yeast

1/4 cup warm water

1 cup milk

3/4 cup butter

1 1/4 cup mashed potatoes

1/2 cup sugar

2 tsp salt

8-8 1/2 cups flour

2 eggs-beaten


Directions

Dissolve the yeast in the warm water and set aside.

Combine the milk,butter and potatoes in a saucepan and heat over low heat just til butter is melted.

Remove from heat and pour into a large bowl.

Add in the sugar,salt,eggs,yeast and 2 cups of the flour and mix well.

Cover loosely and let stand for 2 hours(the dough will look like a sponge).

Stir in enough of the remaining flour to make a soft dough.

Turn onto a floured surface and knead til smooth and elastic(about 6 minutes).

Place in a greased bowl,turning to coat.

Cover and let rise in a warm place til double in size.

Punch dough down and divide into thirds.

On a floured surface,roll one portion at a time into a 12 inch circle.

Cut each circle into 12 wedges and roll them up crescent fashion.

Place each roll,point side down,2 inches apart on a greased baking sheet.

Cover and let rise again til almost double in size(about 30 minutes).

Bake at 400 for about 15 minutes or til golden brown.
