Spoon Bread


Ingredients


2 cups corn meal
(white or yellow)

2 1/2 cups boiling water

1 1/2 Tsp salt

2 eggs-separated

1 1/2 cups sour milk

1 Tsp baking soda

2 Tbsp melted shortening


Directions

Gradually add cornmeal to the boiling water,stirring constantly.

Let cool then stir in shortening,salt,egg yolks,milk and baking soda.

Beat for 2 minutes.

Beat egg whites to stiff peaks and fold into corn meal mixture.

Pour mixture into a well oiled baking dish and bake at 435 deg for 40 min.
