7 Minute Icing
Ingredients
1 cup sugar
1/8 Tsp Cream of tartar
1 egg white
1/3 cup boiling water
1/2 Tsp vanilla
pinch salt
Directions
Combine the sugar,salt,cream of tartar and the boiling water, stirring until well blended.
Pour mixture into top of a double boiler and place over boiling water.
Add the unbeaten egg white.
Beat at medium to high speed until thick and creamy (about 7 minutes).
Add in the vanilla.
Variations:
May substitute brown sugar for the regular sugar.
Try adding chopped nuts,cherries,pineapple,etc to the icing just before spreading on cake.
