Classic New York Cheesecake


1/2 cup butter-softened

1/4 cup packed brown sugar

4 eggs

1 1/4 cup flour

32 oz cream cheese-softened

1 1/4 cup sugar

1/4 cup flour

4 tsp vanilla

16 oz sour cream

1/4 cup sugar


Preheat oven to 350.

For the crust

In a large bowl,beat butter on med speed for 30 seconds.

Add brown sugar and beat til fluffy.

Add 1 egg and beat well.

Slowly beat in the 1 1/4 cup flour until all is combined.

Divide dough in half,cover and refrigerate one portion.

Spread remaining portion over bottom of ungreased springform pan with sides removed.

Place on baking sheet and bake for 10 min.

Let cool completely.

After completely cooled,attach sides of pan and press chilled dough onto sides to a height of about 1 3/4 inches and set aside.

Increase oven temp to 450.

For the filling

In large bowl,beat the cream cheese and 1 1/4 cup sugar til fluffy.

Beat in the 1/4 cup flour at low speed til smooth.

Add the remaining 3 eggs and 1 tbsp of vanilla all at once,beating at low speed just til combined.

Stir in 1/2 cup sour cream.

Pour batter into prepared pan,

Place on shallow baking pan in the oven.

Bake for 10 min and reduce oven temp to 300.

Bake 30 min more or until center appears nearly set when gently shaken.

Remove from oven.

For the topping

Stir together remaining sour cream,1/4 cup sugar and vanilla.

Spread evenly over top of baked cake.

Return to oven and bake for 15 min more.

Remove from oven and cool for 15 min.

Loosen crust from sides of pan.

Cool another 30 min. and then remove sides of pan and cool completely.

Cover and chill at least 4 hours.

Let stand at room temp for 15 min before slicing.
