Emerald Isle Cake
Ingredients
For the cake
1/2 cup butter-softened
1 cup sugar
2 eggs
1 tsp vanilla
1 3/4 cup flour
2 tsp baking powder
1/2 tsp salt
1/2 cup milk
For the glaze
1 cup powdered sugar
2 tbsp milk
Green food coloring
Slivered almonds
Directions
For the cake
Cream the butter and sugar.
Add the eggs,one at a time,blending well after each one.
Mix in vanilla.
Sift together the flour,baking powder and salt.
Add the flour and milk a;ternately to the creamed butter-sugar mixture and beat til smooth.
Pour into a greased 9 inch pan.
Bake at 350 for 40 minutes or til tests done with a toothpick.
For the glaze
Combine the powdered sugar with enough milk to make a thin glaze.
Add enough green food coloring to obtain the shade you want.
Use a fork to poke holes in the warm cake and pour the glaze over all.
Sprinkle the almonds over the glaze.
