Grandma C's Emergency Cake


1 2/3 cups sifted cake flour

1 cup sugar

2 TSP baking soda

2 egg whites

Soft butter or shortening

1/2 cup milk

1/4 Tsp grated nutmeg


Sift together flour, sugar, nutmeg and baking soda.

Place the egg whites in a 1 cup measuring cup and add enough soft, NOT MELTED, butter to half fill the cup.

Add enough of the milk to fill the cup (a total of 1 cup).

Slowly add the egg white/butter/milk mixture into the the dry ingredients,and beat vigorously until all is incorporated.

Pour into 2 greased and floured cake pans.

Bake at 325 for 20-30 min or until cakes test done.

Frost with your favorite icing when the cake has cooled.

Now, both of my grandmothers were from the school of "a pinch of this and a pinch of that" cooking so on some of their recipes that I have added to this website, you may need to do a little tweaking of the recipes to suit your taste. For example,you will notice that there is no salt or flavoring extract in this recipe.
