Maple Carrot Cupcakes
Ingredients
2 cup flour
1 cup sugar
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
4 eggs
1 cup oil
1/2 cup maple syrup
3 cup carrots-grated
1/2 cup chopped nuts
Directions
Sift together the flour,baking powder,baking soda,cinnamon and salt.
Stir in the sugar.
In a separte bowl,beat the eggs,oil and maple syrup.
Add the egg mixture to the dry ingredients just til moistened.
Fold in carrots and nuts.
Fill greased or paper lined muffin cups 2/3 full.
Bake at 350 for 20-25 min or til done.
Cool for 5 min before removing from muffin pan.
Ice with Maple Cream Cheese Icing and extra nuts.
