One Egg Cake


2/3 cup of sugar

1/4 cup of shortening

1/4 tsp salt

1 tsp. vanilla

1 egg

1 1/2 cups flour

1/2 cup milk

2 tsp baking powder


Cream shortening and sugar.

Add unbeaten egg and flavoring and beat thoroughly.

Sift flour, measure, and sift with salt and baking powder.

Add alternately with milk to creamed shortening and sugar.

Pour into well oiled loaf pan and bake in moderate oven 375 deg for 35 minutes.

Bake in a shallow pan and when cooled, cut with a round cookie or biscuit cutter,split each round in half and use as a short cake.
