Sponge Cake


6 eggs- separated

1 cup sugar

1/4 tsp. salt

1 Tbsp grated lemon rind

1 cup cake flour

1 Tbsp lemon juice


Beat egg yolks until thick.

Add in the salt,sugar,lemon juice and lemon rind.

Sift the cake flour,measure and sift again then fold it into the egg mixture.

Beat egg whites until they hold their shape and then gently fold them into the yolk batter.

Pour into ungreased tube pan and bake at 325 deg for 40 min
