White Chocolate Mud Cake
Ingredients
4 1/2 oz white chocolate melts
1/2 cup warm water
1/2 cup butter
1 cup castor* sugar (superfine)
2 eggs
1/2 cup sour cream
1 1/4 cups plain flour
1/2 cup selfrising flour -
2 Tbsp whisky
Directions
Grease and line 8"round cake pan.
Combine white choc and water in a small bowl,stir until smooth then cool to room temp.
Cream butter and sugar til light and fluffy.
Add eggs one at a time beating well after each addition.
Add chocolate and mix well.
Transfer to larger bowl and fold in sour cream and sifted flours.
Pour into cake pan and bake 250 deg, until lightly browned and
firm.
Remove from oven sprinkle whisky over top and leave in pan until
cool.
*If you don’t have any castor sugar on hand,
you can make your own by grinding granulated sugar
for a couple of minutes in a food processor
(this also produces sugar dust, so let it settle for a
few moments before opening the food processor).
