Caramels
Ingredients
2 cups sugar
2 cups cream
1 3/4 cup corn syrup
1 cup butter
pinch of salt
1 cup chopped nuts - optional
Directions
In a heavy pan, combine the sugar,1 cup cream,corn syrup,butter and salt.
Let mixture boil for 30 min.
Add the remaining cream and let boil to firm ball stage (245-248 deg).
Add nuts if using and immediately, without stirring, pour mixture into a well butter shallow dish.
When completely cooled, cut into squares.
