Chocolate Covered Cherries


2 1/2 cup powdered sugar

1/4 cup butter-softened(no substitues)

1 tbsp milk

1/2 tsp almond extract

2 8oz jars maraschino cherries with stems-well drained

2 cup semi sweet chocolate chips

2 tbsp shortening(such as crisco)


Combine the powdered sugar,butter,milk and the almond extract and mix well.

Knead the mixture into a large ball and then break off pieces and form into 1 inch balls.

Flatten each ball into a 2 inch circle.

Wrap each circle around a cherry and roll lightly in the hands.

Place each,with the stem up,on a waxed paper lined baking sheet.

Cover loosley and refrigerate at least 4 hrs or overnight.

Melt the chips and the shortening in the top of a double boiler.

Holding onto the stem of each cherry,dip it in the chocolate and set it back on the waxed paper to harden.

Store in a tightly covered container at least 2 weeks before serving.
