Grandma B's Divinity


2 cups sugar

1/2 cup light corn syrup

2 egg whites

1 cup chopped nuts

1/8 tsp cream of tartar

1/2 cup water

1/8 tsp salt

1/2 tsp vanilla


Combine sugar, syrup, water, salt and cream of tartar in a heavy pan.

Cover and bring to a rolling boil, boiling for 5 minutes.

Uncover and wipe down sides of pan with a damp cloth.

Continue boiling, without stirring to a firm ball stage (245-248 deg. on a candy thermometer).

Beat egg whites to stiff peaks.

Remove the liquid from the heat and pour it slowly over the beaten egg whites while beating constantly with an electric mixer or a whisk.

Continue beating until mixture holds its shape when dropped from a spoon.

Stir in the nuts and vanilla (other flavors can be used and a few drops of food coloring).

Drop by tsp. full onto waxed paper or spread in a well buttered pan (cut in squares when cold)

The old saying is true..... do not attempt to make divinity on a rainy or humid day as it will not "set up" correctly.
