1 cup sugar

1 Tsp vanilla

1/2 cup hot water

1/4 cup cold water

pinch of salt

1 Tbsp unflavored gelatin


Soften the gelatin in the cold water.

Combine the sugar with the hot water in a pan,bring to a boil and boil to a softball stage (234-238 deg).

Stir in the gelatin and salt then beat til stiff.

Stir in vanilla and beat well.

Lightly dust a shallow baking pan with powdered sugar and pour cooked mixture into it.

Spread the mixture evenly and lightly dust with more powdered sugar.

When cool and firm, cut into squares and roll each marshmallow in powdered sugar.
