Old Fashion Rock Candy

Ingredients

2 cups sugar

1 cup light corn syrup

1/2 cup water

1/2 cup red cinnamon candies

1 teaspoon butter or margarine

Directions

This is a great recipe to use if you don't want all the hassle of the sterile jar and string way of doing rock candy.

Combine first 3 ingredients in a heavy 3-quart saucepan.

Cook over low heat, stirring constantly, until sugar dissolves.

Continue cooking over medium heat, stirring often, about 10 minutes or until mixture reaches soft ball stage or a candy thermometer reaches 234 degrees.

Add cinnamon candies and cook, stirring constantly, to hard crack stage or a candy thermometer reaches 300 degrees.

Remove from heat and stir in butter.

Quickly pour into a buttered 13x9x2 inch pan and cool.

When cooled,break into pieces.

Other options
Use a few drops of food coloring and 1/2-1 teaspoon of flavor extracts such as peppermint in place of the cinnamon candies.
If desired, sprinkle buttered pan with a light coating of powdered sugar before pouring mixture or toss broken pieces in powdered sugar to keep them from sticking together in your storage container.
