Pecan Pralines 1


1 cup sugar

1/2 cup light corn syrup

1/4 cup water

1 cup pecan pieces

1 tbsp butter

1 tsp baking soda

1/2 tsp vanilla


Lightly grease a large cookie sheet and set aside.

Combine the sugar,syrup and water in a heavy sauce pan and bring to a boil over medium-high heat.

Cook for 15 min or to 328-334 on a candy thermometer,watching carefully during the last 5 minutes.

The mix will bubble constantly but do not stir.

Reduce the heat to low and stir in the pecans.

Cook for 1 minute,stirring constantly.

Remove from heat and stir in the butter,baking soda and vanilla.

The mix will "foam up".

Pour carefully onto the prepared cookie sheet and spread the mixture out.

Let stand til hardened and cooled.

Break into desired size pieces.

Store in an airtight container at room temp for up to 3 days.
