Forgotten Cookies


2 egg whites
(at room temperature)

3/4 cup sugar

1 cup semi sweet or milk chocolate morsels

1 cup pecans

1 teaspoon vanilla flavoring


Preheat oven to 350 degrees.

Beat egg whites to foamy soft peaks.

Gradually add sugar and beat to stiff peaks.

Stir in vanilla, chocolate morsels and pecans.

Line a cookie sheet with foil and spray lightly with a cooking spray (not the flour spray)

Drop by spoonfuls onto the prepared cookie sheets.

Place in oven and turn off the heat.

Leave overnight in oven with door closed and "forget" overnight.

These are a meringue type cookie so they do best if stored in an air tight container so they will stay crisp and not get 'chewy'


For Christmas time, use a few drops of red or green food coloring. Use a peppermint flavoring instead of the vanilla. Break candy canes into small bits and add with or without the chocolate chips. Experiment with any flavorings or additions you might like.
