Lemon Cookies


1/4 cup butter

1 cup sugar

1 well beaten egg

1 Tbsp lemon juice

zest of 1 lemon

1 1/2 cups cake flour

1/2 Tsp baking powder

1/8 Tsp baking soda

1/4 Tsp salt

1/2 cup chopped raisins(optional)


Cream the butter and sugar.

Add the egg and mix well.

Stir in the lemon juice and the lemon zest.

Sift the flour,remeasure and sift again with the baking powder,baking soda and salt.

Add flour to creamed mixture.

Stir in raisins if using.

Turn onto a lightly floured board and roll to 1/8 inch thickness.

Cut with a floured cookies cutter of choice and place on a well oiled cookie sheet.

Bake at 425 deg for 10-12 min.
