Frying Pan Cookies


1 1/2 cups chopped dates

2 eggs

1 cup sugar

1/4 cup butter

1 teaspoon vanilla

1/4 teaspoon salt

3 cups crispy rice cereal

1/2 cup chopped nuts

chopped coconut


Combine first 6 ingredients in a frying pan over low heat.

Cook for 10 minutes, stirring constantly.

Cool slightly then add the cereal and nuts, mixing well.

Form into balls of desired size and roll each in the chopped coconut.

Store in an airtight container.
