Baked Custard


4 cup milk

1 cup sugar

1/3 Tsp salt

8 eggs

1 Tsp vanilla

1 Tsp lemon flavoring

grated nutmeg


Beat eggs til whites and yolks are well blended.

Add in sugar,salt,vanilla and lemon flavoring.

Scald milk and slowly pour into egg mixture while stirring constantly.

Pour into oiled molds or one oiled baking dish.

Set molds/pan in a larger pan filled with warm water so that water reaches no more than 1/2-3/4 up the side of the molds.

Dust with nutmeg.

Bake at 375 deg until knife inserted in center of custard comes out clean (approx 45 min).

Cool and serve.

For a caramelized custard, caramelize 1 cup of sugar and pour into bottom of molds/pan. Tilt molds so that the caramel coats all sides then pour in the custard and bake as above.
Substitute other flavorings for the vanilla and lemon.
