Creme Brulee


9 egg yolks

3/4 cup superfine sugar

6 Tbsp superfine sugar

1 qt cream

1 vanilla bean


Cream together the yolks and 3/4 cup sugar until pale and thick.

Pour cream into a heavy pan.

Split and scrape the vanilla bean,then add it to the cream.

Heat mixture over med-low heat just to boiling.

Add small amount of hot cream to the yolks to temper,then add in remaining cream.

Divide into ramikins or pour into casserole dish.

Place ramikins/dish in a large pan and fill with water to 1/2 way up sides.

Bake at 325 for 40 min or until set.

Chill 2 hrs then sprinkle tops with the remaining 6 Tbsp of sugar.

Carmelize top either by placing under broiler for a few minutes or by using a small kitchen torch.

There are many different recipes for this classic dessert but this is my favorite. For a chocolate creme brulee, melt 1/2 cup chocolate chips with the cream. Also, try using different flavor extracts (1/2-1 tsp) in place of the vanilla bean.
