Fried Banana with Lychee and Lilikoi


6 small finger bananas
or Apple Bananas

3 Tbsp butter

3 Tbsp brown sugar

1 can lychees(plus 1/2 cup syrup)

Juice 1/2 lime

2 tablespoons lilikoi (passionfruit) pulp
or preserved lilikoi syrup


Peel bananas and cut in half lengthways.

Heat butter and sugar in a heavy based frypan and fry banana for about 1 minute on each side until lightly golden.

Divide between plates.

Add lychees to pan, along with lime juice, the lychee syrup and the lilikoi (pulp or preserved ).

Simmer for a minute or two until syrupy then spoon over bananas.

For that "little extra",remove pan from heat, add small amount of brandy or cognac to the lychee in pan, set aflame and then spoon over bananas.
