Indian Pudding


1/2 cup cornmeal

1/4 cup sugar

1/2 Tsp salt

1/4 cup flour

1/4 cup molasses

1/4 Tsp ground ginger

1/4 Tsp cinnamon

4 cups milk

1 egg - well beaten


Combine the cornmeal,flour,molasses,sugar,egg,salt and spices and beat thoroughly.

Scald milk and slowly pour into the mixture while stirring constantly.

Cook mixture over medium heat,stirring constantly, until mixture begins to thicken.

Pour into a well oiled baking dish and bake at 325 deg for 30 min.

Serve warm with cream or a flavored sauce.
