Macadamia Tart


For the crust

1 cup macadamia nuts-chopped fine

1 cup old fashioned oats-uncooked

1 cup flaked coconut

2 tbsp sugar

7 tbsp butter-cut in small pieces

For the filling

8 oz cream cheese-softened

1/2 cup sugar

2 eggs

1 3/4 cup pumpkin

2 tsp cinnamon

1 tsp ginger

1 tsp vanilla

Whipped cream and additional macadamia nuts for garnish


For the crust

Mix the nuts,oats,coconut and sugar together.

Cut in the butter and mix well.

Press into the bottom and up the sides of an 11 inch tart pan.

Bake at 350 for 20-25 minutes.

For the filling

Mix the cream cheese and sugar together until well blended.

Stir in the eggs,pumpkin,cinnamon,ginger and vanilla and mix well.

Pour into the prepared crust and bake at 350 for 35-40 minutes or til a knife inserted in center comes out clean.

Let cool and garnish with whipped cream and additional macadamia nuts.
