Flaming Rum Bananas with Meringue


Banana fillng

1 tsp unsalted butter

8 firm bananas-coarsley chopped

2 tbsp sweetener(sugar,maple syrup,or cane sugar)

5 tbsp dark rum

1 tbsp fresh lime juice


5 egg whites

2 tbsp sugar

1 tsp light rum

1/2 tsp vanilla


For the filling

Saute bananas in butter for 1 minute. Stir in sweetener and saute 3-5 min.more until soft. Pour in rum and flambe. Cook until alcohol is burned off. Add lime juice and adjust seasoning if necessary. Distribute among buttered ramekins.

For the meringue

Whip whites until they form soft peaks.

Slowly add the sugar,rum and vanilla.

Whip to stiff peaks.

Spoon meringue on top of bananas.

Bake 350 degrees until meringue is golden and cooked through.
