Crab Delight


2 Tbsp chopped green pepper

2 Tbsp butter

2 Tbsp flour

1 cup strained tomatoes

1 cup grated cheese
cheddar preferred

2/3 cup milk

dash cayenne pepper

1/2 Tsp dry mustard

1/4 Tsp salt

1/2 Tsp Worcestershire sauce

1 egg

1 1/2 cup flaked crab meat


Scald the milk.

Saute the green pepper in the butter.

Add the flour and mix until smooth.

Combine the seasonings,tomatoes,cheese and the lightly beaten egg then add to the pan.

Place all in the top of a double boiler and cook over hot water for 10 min.

Stir constantly while slowly adding the milk.

Add in the crab meat and heat thoroughly.

Serve in pastry shells,on crackers or toast rounds.
