Crab Quiche


Ingredients


8 oz crab meat

1 large onion - chopped

1 Tbsp butter

3 eggs

1 1/2 cups half and half

1/4 cup cake flour

1/2 Tsp salt

4 oz shredded Swiss cheese

1/2 Tsp thyme leaves

1 10inch pie crust


Directions


Mix together the eggs,salt,half and half and cake flour, mixing til completely smooth.

Cook the onions in the butter til tender and translucent.

Add crab meat to onion and cook over medium heat til crab is thoroughly heated.

Stir thyme into crab mixture.

To assemble, place half of the cheese in the pie shell,add the crab/onion mixture, the remaining cheese and then top with the egg mixture.(If needed, push the cheese down so that it is totally submerged - to prevent cheese from burning) .

Bake at 25 deg for 20 min, educe heat to 300 deg and continue baking for another 30 min.

Cool at least 10 minutes before slicing.

Variations: Substitute other meats and/or cheeses as desired.
