Fish with Onion Sauce


Ingredients


2 lb fish filets(any type)

1 cup flour

Salt and pepper to taste

1/4 cup olive oil

1/3 cup pine nuts

2 1/2 cup onion-chopped

3 cup water

1 cup rice

2-3 tbsp lemon juice(or to taste)


Directions

Cut the fish filets into large chunks.

Mix the flour,salt and pepper and dredge the fish in it.

Roast the pine nuts in 2 tbsp of the oil for 5-10 minutes.

Remove the nuts and saute the fish in the same pan.

Remove the fish to a dish and keep warm.

Add the rest of the oil to the pan,add the onions and cook til golden.

Add 2 cups of water and continue cooking for 20 minutes.

Remove 1 cup of the sauce and set aside.

To the remaining sauce,add lemon juice to taste and continue cooking til it begins to thicken.

Remove from heat,stir in the pine nuts and keep sauce warm.

To the reserved 1 cup sauce,add enough water to make 2 1/2 cups.

Bring to a boil,add the rice,cover and cook til rice is done.

Let stand,covered for 5 minutes til all liquid is absorbed and then "fluff" the rice.

Place the rice on serving platter,add the warm fish and top with the heated sauce.
