Oven Fried Catfish


8 fillets boneless catfish

2 cups milk

3 1/2 cups white cornmeal

3 1/2 cups yellow cornmeal

1 Tsp salt

1 Tsp red pepper flakes

1 Tsp black pepper

4 Tbsp fine minced garlic

4 Tbsp dried thyme

1/4 cup melted butter


In the refrigerator,soak catfish in milk for approximately 1 hour.
(this step is optional)

In a bowl,mix together both cornmeals and all seasonings.

Take the fish out of the milk and shake off the excess.

Coat each fillets with the spiced cornmeal mixture.

Place the fish on a buttered cookie sheet and drizzle the melted butter over each fillet.

Bake fish in 400 deg. oven for approximately 10 minutes until golden brown and fish flakes easily.

Time may vary depending on the thickness of fillet.
