Salmon Loaf


2 cups salmon filet

2 eggs-well beaten

2 Tbsp butter-melted

1 cup buttermilk

1/2 cup cornmeal
(yellow or white)

1/4 cup bread crumbs
or cracker crumbs

salt and pepper to taste


Flake the salmon and remove any bones.

Combine the salmon with beaten eggs,butter,cornmeal and crumbs.

Mix in the buttermilk and season to taste.

Pour into a well oiled loaf pan.

Bake at 425 deg for 20 min.

May be served as a main dish or sliced thin,served with crackers or toast points as an appetizer.
