Hearty Pasta and Vegetables


1/4 tsp coarsely ground black pepper

1 16 oz pkg corkscrew or rotelle macaroni

1 28 oz can crushed tomatoes

2 garlic cloves-crushed

2 medium-size carrots-thinly sliced

1 medium-size onion-diced

1/2 tsp salt

1 small green pepper-diced

1 teaspoon sugar

2 teaspoons vegetable oil

1/2 cup plus 2 tbsp water

Parmesan cheese


Heat vegetable oil over medium heat and add the carrots,onion,green pepper,garlic,and 2 tablespoons water.

Cook,stirring frequently,until vegetables are tender and golden(about 15 minutes).

Stir in tomatoes,sugar,pepper,1/2 teaspoon salt,and 1/2 cup water.

Increase heat to high and heat to boiling.

Reduce heat to low,cover and simmer for 20 minutes.

Meanwhile,prepare macaroni as label directs.

Drain macaroni,return to pot and add sauce,tossing to mix well.

Serve with cheese.
