Chocolate Cream Pie


1 cup evaporated milk

1 cup water

2 eggs - separated

1/2 cup plus 2 Tbsp sugar

4 Tbsp flour

1/4 Tsp salt

1 Tsp vanilla

1 square baking chocolate


Melt the chocolate in top of double boiler over hot(not boiling) water.

Add flour,6 Tbsp water,1/2 cup sugar and salt and mix until smooth.

Combine the evaporated mik with the remaining water and slowly add to the chocolate mixture,stirring constantly.

Continue cooking over the hot water until thick and creamy.

Add beaten egg yolks and cook an additional 5 minutes,stirring constantly.

Let mixture cool then add the vanilla.

Pour into prebaked pie shell.

Beat egg whites with the sugar to make a meringue and spread on top of chocolate mixture.

Bake at 325 deg for 20 min or until meringue is nicely browned.
