Chocolate Haupia Pie


For crust

2 cups graham crackers crumbs

1 cup melted butter

For Haupia

3 12 oz cans coconut milk

1-1/4 cups sugar

1-1/4 cups cornstarch

For chocolate topping

3 boxes cook-and-serve chocolate pudding

4-1/2 cups milk


For crust

Mix crumbs and butter together, press into bottom of 9x13 pan and chill.

For Haupia

In a pot,mix all ingredients until smooth.

Cook on medium heat,stirring continuously, until mixture thickens.

Spread over crust and return to fridge.

For chocolate topping

Combine pudding mix and milk and cook on medium heat,stirring continuously, until thick and bubbles appear.

Remove from heat and cool slightly while continuing to mix so "skin" doesn't form.

Spread pudding over haupia and keep refrigerated until ready to serve.
