Mince Meat


2 lbs lean beef or veal
finely chopped

4 lbs good cooking apples

2 1/2 lbs raisins

4 cups brown sugar

1/2 Tsp cloves

1 1/2 Tsp nutmeg

1/2 cup molasses

1/2 lb ground suet

1 1/2 lbs currants

1/4 lb ground citron

1 1/2 Tsp cinnamon

1 Tsp mace

2 Tsp salt

grape juice,apple cider or water


Peel,core and chop the apples.

In a large pot,combine the apples with the remaining ingredients.

Add enough of your chosen liquid to moisten mixture.

Simmer until meats and fruit are very tender and flavors are well blended.

Pack in sterilized jars and process to seal.

Use as much mince as you want to fill a pie shell and cover with a top crust or lattice.

Bake at 425 deg for 25 min.

Note: mincemeat is seldom seen these days but a mince pie was always a tradition at Thanksgiving and Christmas. If you like, a little brandy or rum may be added at the end of cooking time.

Suet is the raw,hard,fat of beef or mutton.
