Vinegar Pie


2 cups boiling water

1/4 cup white vinegar

1 cup plus 3 Tbsp sugar

2 Tbsp flour

3 eggs - separated

1 Tsp lemon flavoring

1/4 Tsp salt


Beat the egg yolks until thick.

Add 1 cup sugar,flour and salt.

Add in the boiling water slowly while stirring constantly.

Stir in the vinegar and cook slowly in top of double boiler,over hot water,until thick and smooth.

Add in lemon extract.

Pour into prebaked pie shell.

Make meringue using the 3 egg whites and remaining 3 Tbsp sugar.

Cover pie with meringue and bake at 325 deg for 20 min. or until golden.
