Stuffed Pork Chops


2 large pork chops

4 oz. breadcrumbs

1 oz. finely chopped walnuts

1 Tsp chopped fresh thyme

8 oz. mandrin oranges - drained

2 Tbsp oil


Cut a slit in chops on one side only creating a pocket.

Combine breadcrumbs,walnuts,thyme and drained oranges in a bowl.
(reserve juice)

Add enough orange juice to bind mixture together.

Divide stuffing between chops and place in roasting pan with oil

Pour remaining juice over the chops,cover and roast at 400 deg. for 45 minutes.
