Chicken Flautas
Ingredients
2 cups chicken-cooked and cubed
2/3 cup prepared salsa-thick and chunky style
1/4 cup sliced green onion
3/4 tsp cumin
oil for frying
32 small corn tortillas
2 cups shredded cheese such as cheddar,jack,etc.
Lots of guacamole
Directions
Combine the chicken with the salsa,onion and cumin and set aside.
Heat 1/2 inch oil in heavy skillet til hot but not smoking.
Cook each tortilla 2 seconds on each side to soften and then drain.
Spoon 1 tbsp of chicken mixture and 1 tbps of cheese down the center of each tortilla.
Roll up tightly and secure with a toothpick.
Place seam side down on a baking sheet and bake at 400 for 18-20 minutes or until crisp.
Serve hot with guacamole and extra salsa.
