Chicken Chow Mein


2 ln boneless,skinless chicken breast cut into thin strips or small chunks

4 cloves garlic,minced

2 tsp vegetable oil-divided

4 tbsp shoyu

4 tbsp dry sherry

12 oz fresh snow peas or 2 of the 6 oz pkg fozen snow peas-thawed

6 large green onions cut diagonally into 1 inch pieces

8 oz Chinese egg noodles cooked and drained

2 tsp sesame oil (optional)

Cherry tomatoes and fresh herbs


Toss the chicken and garlic together.

Heat 1 tsp of the oil in a wok or large skillet.

Add chicken and stir fry 3 min or until chicken is no longer pink.

Transfer to a bowl and toss with shoyu and sherry.

Heat remaining 1 tsp oil. add snow peas. Stir fry 2 min for the fresh and 1 min for the frozen.

Add the green onion and stir fry for 30 sec.

Add the chicken back to the wok and continue cooking for 1 min.

Add the cooked noodles and stir fry for 2 min or until heated through.

Stir in sesame oil and transfer to serving dish.

Garnish with cherry tomatoes and herbs.
